Ingredients:

- 500 grams (17.6 oz) linguine, spaghetti, or fettuccine pasta
- 500 grams (17.6 oz) uncooked, peeled large prawns
- 150 grams (5.3 oz) butter
- 5 cloves garlic
- 1 tablespoon olive oil
- 200 grams (7.05 oz) parmesan cheese
- 1 tablespoon chilli flakes
- 100 ml (3.4 fl oz) dry white wine
- 4 sprigs fresh parsley
- Zest of 1 whole lemon
- Salt and pepper to taste

Instructions:

1. Boil pasta following package instructions until al dente - do not overcook. Drain, reserving 100 ml of pasta water.
2. While pasta cooks, season prawns with salt and pepper. Cook in a pan with olive oil and 100 grams of butter on high heat, approximately 2 minutes per side. Avoid overcrowding, cook in batches if necessary.
3. Add garlic and chilli flakes to the pan when the last batch of prawns is halfway done. Sauté for 2 minutes, then add white wine.
4. After the alcohol has evaporated, turn heat to low. Add the remaining butter, Parmesan, parsley, reserved pasta water, and lemon zest.
5. Remove from heat. Add pasta to the pan and toss together, garnish with more parmesan if desired.
