Ingredients

- 400 grams (14.1 oz) salmon (4 fillets)
- 300 grams (10.6 oz) orzo 
- 1 fresh leek 
- 200 grams (7.05 oz) spinach 
- 3 sprigs fresh dill
- 1 clove of garlic 
- 1 tablespoon olive oil 
- 100 ml (3.4 fl oz) white wine
- 100 grams (3.5 oz) parmesan
- 1 tablespoon butter
- 1 tablespoon lemon zest
- salt, pepper to taste


Instructions:

1. Chop the leek.
2. Finely chop the garlic and dill.
3. In a large pot on medium to high heat, add 1 tablespoon of olive oil with the leek and spinach. Sauté for 3-5 minutes.
4. Add the orzo and garlic to the pot, mix for 2 minutes. Season with salt and pepper.
5. Pour in the wine and let the alcohol evaporate.
6. Once the alcohol has evaporated, add 600 ml of water, stir, and cover. Let it cook for 10 minutes.
7. While the orzo is cooking, prepare the salmon. Coat each fillet with salt, pepper, and olive oil.
8. Cook the salmon skin side up in a pan on high heat for around 4 minutes with butter without moving or flipping. Flip the fillets and cook for another 3-4 minutes, skin side down, or until done to your liking.
9. Finely grate the parmesan.
10. Once the orzo is fully cooked, add the grated parmesan, finely chopped dill, and lemon zest. Stir well.
11. Transfer the orzo risotto to a plate, top with the salmon.
