Samosadillas
This recipe is inspired by the amazing chef John Mitzewich from Food Wishes, and has been a repeating star in our dinner parties for several years now. Full of flavor and nutrients, it pleases most taste buds and leaves everybody wanting more! It's super easy to put together and can easily be adjusted to whatever veggies or spices are available.
Samosadillas are a delicious and unique twist on traditional samosas. Instead of using a thick dough wrapper, we use tortillas to create a crispy and crunchy exterior, filled with a flavorful and creamy potato and vegetable mixture. The potatoes are cooked until tender, then mashed with frozen peas and carrots, coconut cream, and a blend of warming spices. Preparation time: 15 minutes
Cooking time: 25 minutes
Ingredients:
- 6 medium size tortillas
- 3 medium size potatoes
- 75 grams (2.6 oz) frozen peas
- 75 grams (2.6 oz) frozen carrots
- 200 grams (7 oz) coconut cream
- 1.5 tablespoons garam masala powder
- 1.5 tablespoons curry powder
- salt, pepper to taste
Instructions:
1. Peel potatoes, cut into small 0.5 inch cubes and boil for 15-20 minutes or until fully cooked. Remove
from heat.
2. Drain the potatoes and add back in the pot together with frozen peas, carrots, coconut cream, spices,
and seasoning.
3. Mash until mixture is roughly combined - do not overmash.
4. Add mixture on half of each tortilla and fold - for all 6 tortillas.
5. Place one tortilla at a time in a non-stick pan and fry each side until golden brown.
6. Cut in half each samosadilla and enjoy!
