Ingredients:
- 400 grams (14 oz) pad thai noodles
- 1 tablespoon vinegar
- 2 tablespoons sesame seeds
- 3 cloves finely minced garlic
- 1 spring onion
- 2 tablespoons gochujang
- 350 grams (12 oz) extra firm tofu
- 2 teaspoons white sugar
- 1 tablespoon smooth peanut butter
- 2 tablespoons cornstarch
- 1 tablespoon unsalted butter
- 2 teaspoons chilli flakes
- 2 tablespoons soya sauce
- salt, pepper to taste
Instructions:
1. Soak noodles in a large bowl of cold water for at least 10 minutes.
2. Cut tofu into bite-sized cubes. Toss with cornstarch until evenly coated.
3. Heat a large pan over high heat. Add 1 tablespoon butter, minced garlic, 1 tablespoon gochujang, and 1 tablespoon soy sauce. Add tofu and cook for 3-5 minutes, stirring occasionally. Remove tofu and set aside.
4. In the same pan, combine the remaining gochujang, soy sauce, peanut butter, vinegar, and chilli flakes. Whisk until smooth.
5. Drain noodles and add to the pan along with 400 ml of water. Cover and cook on high heat for 5 minutes, stirring occasionally.
6. In a separate pan, toast sesame seeds over high heat for 2 minutes. Remove from heat.
7. Once noodles have absorbed the liquid, add the cooked tofu back to the pan. Stir to combine.
8. Serve hot, garnished with toasted sesame seeds and sliced spring onions.
