Ingredients:
- 12 small mushrooms
- 4 eggs
- 1 tablespoon olive oil
- 200 grams (7 oz) fresh spinach
- 30 grams (1 oz) parmesan
- 2 large tortillas
- 50 grams (1.8 oz) extra firm tofu
- 1 avocado
- 1 small spring onion
- salt, pepper to taste
Instructions:
1. Chop mushrooms into small pieces. Saute in a pan with olive oil and spinach for 5-7 minutes on
high heat.
2. Dice tofu into small 1 cm cubes and add to the pan. Cook together with mushrooms and spinach for
3-4 minutes.
3. Crack eggs, add to pan, mix with rest of ingredients - will resemble a rough scramble.
4. Chop onions finely and grate cheese. Add to pan and mix - cook until cheese melts and turn heat off.
5. Set aside to let scramble cool down slightly.
6. Mash half avocado on each tortilla. Divide egg scramble in 2 and add on top of avocado.
7. Roll into a burrito and cook bottom side down in the pan for around 3 minutes for a crispy finish.
