Ingredients:
- 300 grams (7 oz) yellowfin tuna
- 4 tablespoons mayonnaise
- 8 medium size tortillas
- 1 teaspoon chipotle powder
- 100 grams (3.5 oz) purple cabbage
- 1 jalapeño
- 100 grams (3.5 oz) white cabbage
- 200 grams (7 oz) pineapple
- 2 sprigs fresh cilantro
- 2 limes
- 1.5 tablespoons sriracha
- 1 medium red onion
- 1 clove garlic
- 2 tablespoons olive oil
- 1 tablespoon paprika
- 1 teaspoon cumin
- salt, pepper to taste
Instructions:
1. Finely slice the cabbage into thin pieces - ideally using a mandolin. Mix with juice of 1 lime, salt, pepper and 1/2 tablespoon of olive oil. Set aside.
2. For the salsa, chop the pineapple into 1 inch cubes. Finely chop the onion, 1 sprig of cilantro and jalapeño. Mince the garlic. Mix everything in a bowl with juice from 1 lime, 1/2 tablespoon of olive oil and season with salt. Set aside in the fridge for at least 30 minutes.
3. Combine the mayonnaise, sriracha, and chipotle powder, whisking until well combined.
4. Season the tuna with salt, paprika, and cumin, then slice into thin slices. For easier slicing, you can freeze the tuna for 10 minutes beforehand. Sear in a pan with 1 tablespoon of olive oil on very high heat for 1 minute per side. Let it rest for a couple of minutes, then slice into smaller pieces.
5. Heat up the tortillas for 30 seconds per side in a pan on high heat.
6. Assemble the tacos: start with 1 teaspoon of mayo sauce at the bottom, followed by the pineapple salsa, tuna, cabbage slaw, and top with more mayo sauce.
