Ingredients:
- 1 large avocado
- 2 thick slices of high-quality sourdough bread
- 1 tablespoon dijon mustard
- 4 eggs
- 1/2 teaspoon honey
- 1 tablespoon olive oil
- 300 grams (10.5 oz) white wine vinegar
- 1 spring onion
- 2 radishes
- 1 teaspoon chilli flakes
- 2 teaspoons pumpkin seeds
- 2 tablespoons lemon juice
- salt, pepper to taste
Instructions:
1. In a large bowl add vinegar together with equal parts of water. Crack eggs and let it sit for 10 minutes - this will help the whites firm before poaching.
2. Toast sourdough slices on both sides until golden brown.
3. Combine mustard, honey and chilli flakes, then spread on one side of the bread.
4. Mash avocado together with lemon juice, salt and pepper, then add on bread slices, same side as the mustard mix.
5. Add water in a deep pan or pot on high heat and bring to a simmer. Reduce heat to medium once water starts simmering.
6. After 10 minutes of eggs being in the vinegar/water mix carefully scoop each egg in the simmering water. Do not overcrowd the pot, do it in batches if needed. Let eggs cook for 4-5 minutes on medium heat without stirring.
7. Using a spoon, place the eggs on a plate to remove excess water.
8. Thinly slice the green parts of the spring onion and the radishes.
9. Top avocado toasts with 2 poached eggs per slice, season with salt and pepper, add sliced radishes, and sprinkle spring onion and 1 tablespoon of pumpkin seeds on top.
